The FSS (Alcoholic Beverages) Regulations, 2018 set standards for each type of spirit, wine and beer, covering ethanol content, methanol, higher alcohols (fusel oil), aldehydes, esters and total acids. Methanol is the critical safety parameter, since contaminated spirits cause poisonings, and the declared alcohol by volume must be within the permitted tolerance.
Brewers, distillers, bottlers and importers use testing for new products, label approvals with state excise departments, and export. Heavy metals such as copper and lead, and microbiological stability for beer and wine, complete the picture.
