Overview of Canned & Retort Food Testing
- Tested by
- NABL-accredited partner lab
- Regulation
- FSSAI standards
- Typical turnaround
- 14–21 working days
- Sample needed
- 6–12 containers per batch
Canned and retort-pouch foods are sold at room temperature, so the process must destroy spoilage organisms and Clostridium botulinum, the cause of botulism. The commercial sterility test incubates sealed containers and then checks for swelling, pH change and microbial growth; it takes two to three weeks, which is why it is planned into production schedules.
Container checks cover vacuum, headspace and seal integrity. Food in tinplate cans is tested for tin and lead that may migrate from the can, and drained weight is checked against the label.
