3-MCPD esters and glycidyl esters form during the deodorisation step of refining, when oils are heated to high temperatures. They are highest in refined palm oil and occur in other refined oils and in foods made with them. Glycidol, released from glycidyl esters in the body, is considered a probable human carcinogen.
The EU sets maximum levels in oils, fats and infant formula, and multinational food brands apply them to their Indian suppliers. Refiners use testing to tune their process, and food makers use it to qualify oil suppliers.
