Each edible oil, from mustard and groundnut to rice bran and palm olein, has its own FSSAI standard defined by fat constants such as iodine value, saponification value and BR reading, plus limits on acid value, unsaponifiable matter and moisture. Blended vegetable oils must declare and meet the proportions printed on the pack, and solvent-extracted oils are checked for hexane residue.
Safety parameters matter as much as quality. FSSAI limits industrial trans fatty acids in oils and fats, and screens for argemone oil, which caused epidemic dropsy outbreaks, and for mineral oil. Synthetic antioxidants such as TBHQ, BHA and BHT are permitted only within limits. Food businesses frying in bulk also test used oil for total polar compounds, which FSSAI caps before the oil must be discarded.
