India is one of the world’s largest seafood exporters, and shipments are routinely tested at the destination port. The commonest reasons for rejection are banned antibiotics such as chloramphenicol and nitrofurans in farmed shrimp, histamine in scombroid fish like tuna and mackerel that were not kept cold, and pathogens such as Salmonella and Vibrio.
In the domestic market, formaldehyde (formalin) used to make fish look fresh has led to bans and seizures in several states, and FSSAI’s limits for heavy metals such as mercury and cadmium apply to fish sold in India. Testing at the processing stage lets you hold a lot before it is shipped or sold, instead of losing it at the border.
