Sensory evaluation turns taste, smell, texture and appearance into data. Difference tests such as the triangle test (ISO 4120) show whether a cheaper ingredient, a new supplier or a sugar reduction changes the product in a way people notice. Descriptive profiling by a trained panel maps attributes such as sweetness, crunch or aftertaste, and hedonic tests measure how much consumers like it.
Food brands use sensory work in product development, in matching a benchmark, and as the end-point of a shelf-life study, because many products become unacceptable to eat before they become unsafe. Panels are selected and trained following ISO 8586.
