The FSS (Labelling and Display) Regulations, 2020 require packaged food to declare ingredients from the main allergen groups, such as cereals containing gluten, crustaceans, milk, eggs, fish, peanuts, tree nuts and soybean, and sulphites above a set level. Undeclared allergens are one of the most common causes of food recalls worldwide, usually because of shared lines, rework or a supplier change.
Allergen proteins are measured by ELISA, while PCR detects allergen DNA where processing has damaged the proteins. Testing finished products, incoming ingredients and line swabs after cleaning shows whether your allergen controls work. For gluten-specific claims, see gluten-free testing.
