The FSS (Vegan Foods) Regulations, 2022 define vegan food as food free from ingredients, additives and processing aids of animal origin, and require vegan products to be registered with FSSAI before using the vegan logo. Manufacturers must also take steps to avoid cross-contact with animal products.
Testing supports the claim by looking for animal DNA (cow, buffalo, goat, pig, chicken, fish) by PCR, and for milk and egg proteins by ELISA. It is especially useful for plant-based milks, meat analogues, bakery and confectionery made on shared lines, and for ingredients such as flavours, colours and emulsifiers with hidden animal sources.
