Overview of Gluten-Free Testing

- Regulation
- FSSAI gluten-free rules
- Typical turnaround
- 4–6 working days
- Sample needed
- 250 g
FSSAI allows a “gluten-free” claim only when gluten does not exceed 20 mg/kg in the food as sold, and a “low gluten” claim between 20 and 100 mg/kg. For people with coeliac disease, even small amounts of gluten cause harm, so the claim must hold for every batch.
Gluten is measured by the R5 ELISA method, which detects gluten proteins from wheat, barley and rye. Cross-contact is the main risk: oats processed on wheat lines, shared fryers, or flours milled in the same plant. Regular testing of products and of incoming “gluten-free” ingredients keeps the claim safe.
