The glycaemic index (GI) compares how much a food raises blood glucose with a reference such as glucose. It cannot be calculated from the label: it is measured in a group of healthy volunteers who eat a portion containing a fixed amount of available carbohydrate, with blood glucose measured over two hours, following ISO 26642. Foods with a GI of 55 or less are generally classed as low GI.
India’s large diabetic and pre-diabetic population has made low-GI claims common on millets, atta blends, rice, snacks and beverages. Under FSSAI’s claims regulations such claims need scientific substantiation, and a GI study is the standard evidence.
