Overview of Cereals, Pulses & Flour Testing
- Tested by

- FSSAI grain standards
- Typical turnaround

- Sample needed
- 1 kg per product
FSSAI’s standards for food grains limit moisture, foreign matter, damaged and weevilled grains and uric acid, the last being a marker of insect infestation in storage. Flours such as atta, maida and besan have their own limits for ash, acid-insoluble ash and alcoholic acidity, which rises as flour ages, and atta is checked for gluten content.
Adulteration remains a concern in pulses and besan, from kesari dal (Lathyrus) to added colours on polished dal. Aflatoxin, ergot in wheat and pesticide residues are the safety checks that export buyers, government procurement and large brands ask for most.
