Schedule 4 of FSSAI’s licensing regulations sets the hygiene and sanitation requirements for every food business, from personal hygiene of food handlers to cleaning of equipment and premises. Inspectors, hygiene rating auditors and large customers increasingly ask for evidence that cleaning works, not only a cleaning schedule.
Swabs taken following ISO 18593 from hands, cutting boards, slicers, conveyors, utensils and drains are tested for total counts, coliforms, E. coli, Staphylococcus aureus and, in high-risk areas, Listeria and Salmonella. Settle plates show the microbial load in the air. Restaurants, cloud kitchens, hotels, hospitals and food plants use monthly or quarterly swabbing to find weak spots before they show up in product results.
