Ready-to-eat foods are eaten without further cooking, so any contamination after cooking reaches the consumer. FSSAI’s microbiological standards for ready-to-eat products set limits for Salmonella, Listeria monocytogenes, E. coli, Staphylococcus aureus and Bacillus cereus, and for hygiene indicators that show how well the kitchen or plant is controlled.
Restaurants, caterers, cloud kitchens and institutional kitchens use testing to verify their food safety plan and prepare for FSSAI inspections and hygiene ratings. Packaged snacks and namkeen are also checked for rancidity, the oil they were fried in and nutrition values for the label.
