Adulteration with cane, corn and rice syrups is the biggest problem in the honey trade, and modern syrups are engineered to pass the older tests. FSSAI’s revised honey standard responded with markers that point to specific syrups: C4 sugar by isotope ratio analysis for cane and corn syrup, specific and trace markers for rice syrup, and limits on foreign oligosaccharides, alongside classic quality checks such as moisture, HMF, sucrose and the fructose-to-glucose ratio.
Honey is also tested for residues. Antibiotics used in beekeeping and pesticides from the crops bees forage on are limited under FSSAI’s contaminant regulations, and export buyers in the EU and US apply their own limits. Many exporters add NMR profiling, which compares the honey with a database of authentic samples, when a buyer asks for it.
