Under FSSAI rules, a product can be called ice cream only if its fat is milk fat; products made with vegetable fat must be sold as frozen dessert or frozen confection and labelled clearly. Testing the fat source, together with total solids, protein and weight per unit volume, is how manufacturers and brand owners make sure the name on the pack is right.
Because ice cream is not cooked after mixing and is often temperature-abused in distribution, FSSAI also sets microbiological limits, with Listeria monocytogenes, Salmonella and coliforms the critical checks.
