Milk is classified under the FSS (Food Products Standards and Food Additives) Regulations, 2011 by its minimum milk fat and solids-not-fat (SNF): buffalo, cow, mixed, standardised, toned, double toned and skimmed milk each have their own floor, and the class printed on the pack must match what is inside. Products such as paneer, dahi, khoa, butter, cheese and milk powders have their own composition limits, and FSSAI’s microbiological standards for dairy set limits for both hygiene indicators and pathogens.
Dairy is also one of the most adulterated food groups in India. Testing for water, starch, urea, detergent, neutralisers, hydrogen peroxide, formalin and vegetable fat is how dairies, processors and brand owners protect themselves before a surveillance sample is drawn. For milk powders and infant-grade ingredients, buyers increasingly ask for aflatoxin M1, melamine and antibiotic residue results as well.
