Overview of Meat & Poultry Testing

Tested by
NABL-accredited partner lab
Regulation
FSSAI meat standards
Typical turnaround
5–8 working days
Sample needed
500 g, chilled or frozen

Meat carries the highest microbiological risk of any food group, so FSSAI’s microbiological standards for meat and meat products set limits for Salmonella, Listeria monocytogenes, E. coli and Staphylococcus aureus along with hygiene indicators. Processed products such as sausages, ham and kebabs are also checked for permitted preservatives like nitrite, and for added colours that are not allowed.

Species substitution is a growing concern for retailers, exporters and halal-certified brands. DNA-based tests detect pork, beef, buffalo, chicken, mutton and other species even in cooked or processed meat. Exporters to the Gulf, South-East Asia and Europe add antibiotic residues and heavy metals to meet import-country rules.

Frequently asked questions

Can species testing support halal certification?

Yes. Halal certification bodies and buyers often ask for a PCR test showing no porcine DNA. It complements, rather than replaces, the halal audit of the slaughter and processing chain.

How should meat samples be sent?

Chilled at 0–4 °C or frozen, in the original sealed pack, and reaching the lab within 24 hours for microbiological tests. We arrange cold-chain pickup where needed.

Will FSSAI and buyers accept the report?

Tests are done in labs accredited by NABL for the parameters reported, and for regulatory use in FSSAI-notified labs, which is what FSSAI, food safety officers and most buyers expect. For export, we match the lab to the importing country’s or buyer’s requirement.

Who carries out the testing?

Instacertify’s partner laboratories, accredited by NABL to ISO/IEC 17025 for the parameters on your report. We choose the lab, arrange the sample, follow up until the report is issued and explain the results to you.
