Overview of Bakery & Confectionery Testing

Tested by
NABL-accredited partner lab
Regulation
FSSAI standards
Typical turnaround
5–7 working days
Sample needed
500 g or 6 retail packs

Bakery products are tested for moisture, total ash, acid-insoluble ash and the acidity of the extracted fat, which shows whether the fat used was fresh. Sugar confectionery and chocolates are checked for sugars, permitted colours, flavours and, in sugar-free products, the type and level of artificial sweeteners, which FSSAI permits only for certain categories and within limits.

Cream-filled and fresh bakery items with short shelf lives carry microbiological risk, so yeast and mould, coliforms and pathogens are part of routine checks. Nutrition values are tested for the mandatory nutrition label.

Frequently asked questions

Do bakeries need nutrition tests for every product?

Packaged products need a nutrition label, and the values must be backed by analysis or reliable data. We usually test each recipe once and repeat when the recipe or supplier changes.

Will FSSAI and buyers accept the report?

Tests are done in labs accredited by NABL for the parameters reported, and for regulatory use in FSSAI-notified labs, which is what FSSAI, food safety officers and most buyers expect. For export, we match the lab to the importing country’s or buyer’s requirement.

Who carries out the testing?

Instacertify’s partner laboratories, accredited by NABL to ISO/IEC 17025 for the parameters on your report. We choose the lab, arrange the sample, follow up until the report is issued and explain the results to you.
