Mycotoxins are toxins produced by moulds on crops in the field or in storage. Aflatoxins, which are potent carcinogens, are the most important in India and affect groundnuts, maize, chillies, spices, nuts and dried fruit. When dairy animals eat contaminated feed, aflatoxin B1 passes into milk as aflatoxin M1.
FSSAI sets limits for aflatoxins, ochratoxin A, patulin and deoxynivalenol in specified foods, and export markets add their own, often stricter, limits. Because toxins cluster in a few kernels, a well-drawn, blended sample is essential for a meaningful result.
