Ghee commands a premium, which makes it a frequent target for adulteration with vegetable oils, vanaspati and animal body fats. FSSAI’s ghee standard therefore relies on fat constants that only pure milk fat meets: the Reichert-Meissl (RM) value, Polenske value and butyro-refractometer (BR) reading, read against limits that differ by the region the ghee comes from.
Brand owners use these tests before launch and for every new supplier; exporters need them for buyer specifications; and repackers rely on them to prove that what they bought in bulk is what they sell. Moisture and free fatty acids show how well the ghee was made and stored, while the Baudouin test and phytosterol acetate test pick up sesame and other vegetable oils.
