Vitamins are among the hardest nutrients to measure and the easiest to lose. Many break down with heat, light and oxygen, so a product that meets its claim on the day it is made can fall short months later. FSSAI’s rules for health supplements and fortified foods set the levels that can be claimed, with reference to the recommended dietary allowances for Indians, and expect declared values to hold through shelf life.
Fat-soluble vitamins (A, D, E, K) and most water-soluble vitamins are measured by HPLC or LC-MS/MS, with microbiological assays used for some B vitamins. Minerals are measured by ICP-OES or ICP-MS. Premix suppliers, supplement brands and fortified food makers test each batch and at the end of shelf life to set the right overage.
